The desired outcomes and Operator requirements set out below reflect the importance of ensuring that food and beverage services provided at the Opera House live up to the promise of the building. This will be particularly important as the Opera House, Sydney and Australia seek to deal with and recover from the COVID-19 pandemic.
The Respondent should address the opportunities and challenges for the Lower Concourse Eatery in developing a proposal that will:
• Create a vibrant concept that establishes the venue as a destination in its own right and complements the other well-regarded food and beverage venues on site;
• Propose an upgrade or refurbishment of the current fit-out, that is based around the Respondent’s concept. The proposal should include a plan to replace tables, chairs and waiter stations within the identified operational areas as soon as practicable during the term of the Lease. It is not anticipated that any capital works will be undertaken; and
• Capitalise on the Opera House’s location and reputation, with a focus on reinvigorating the precinct and welcoming customers back on site though engagement both in venue and online via social media channels.
